Ingredients

  • 2 cups all-purpose flour for making flatbreads
  • 1 tablespoon za'atar spice blend
  • 1/2 teaspoon salt
  • 3 cloves garlic minced
  • 1 cup Greek yogurt for dipping
  • 2 tablespoons olive oil for drizzling and cooking
  • 1 medium cucumber sliced for garnish
  • 1 medium tomato diced for garnish
  • 2 tablespoons fresh parsley chopped for garnish

Instructions

  • In a large mixing bowl, combine the all-purpose flour, za'atar spice blend, and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  • Divide the dough into small balls, about the size of a golf ball. Roll each ball out into a flat, thin circle, approximately 6 inches in diameter.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side until golden brown and puffed. Remove from skillet and brush with additional olive oil, if desired.
  • In a small bowl, mix the minced garlic into the Greek yogurt. Season with salt and a drizzle of olive oil. Spread the garlic yogurt on a serving board and arrange the warm flatbreads around it.
  • Garnish the yogurt with diced tomato, sliced cucumber, and chopped parsley. Serve with lemon wedges on the side for squeezing over the dip.

Notes

Tip 1: Allow the flatbreads to cool slightly before serving for the best texture.
Tip 2: Leftover flatbreads can be stored in an airtight container for up to 2 days.
Variation: Add a spicy harissa dip alongside the yogurt for a kick.
