Ingredients
  

  • 1 cup fresh yuzu juice squeezed from ripe yuzu fruits
  • 1 cup fresh pineapple juice preferably from ripe pineapples
  • 2 cups sparkling water chilled
  • 1 tablespoon agave syrup to sweeten, adjust to taste
  • 1/2 teaspoon sea salt to enhance flavors
  • 1 cup fresh pineapple chunks for garnish
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 cup yuzu rind finely grated for garnish
  • 4 lime wedges for garnish
  • 4 fresh mint leaves for garnish

Instructions
 

  • In a large pitcher, combine the fresh yuzu juice, pineapple juice, agave syrup, and sea salt. Stir well until the agave syrup is fully dissolved.
  • Add the chilled sparkling water to the pitcher and gently mix to combine, ensuring not to lose the fizz.
  • Fill four glasses with ice and pour the Yuzu Pineapple mixture over the ice, filling each glass about three-quarters full.
  • Garnish each glass with fresh pineapple chunks, a lime wedge, and a sprinkle of grated yuzu rind. Add fresh mint leaves for an aromatic touch.

Notes

Tip 1: For a more pronounced yuzu flavor, add a splash of yuzu liqueur (non-alcoholic version available) to the mixture.
Tip 2: Make the juice mixture ahead of time and store it in the fridge for up to 1 day before serving.
