Ingredients
  

  • 2 cups low-fat cottage cheese whipped until smooth
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes diced
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh basil chopped
  • 1/4 teaspoon red pepper flakes optional for heat
  • salt and pepper to taste

Instructions
 

  • In a mixing bowl, combine the whipped cottage cheese, fresh lemon juice, and dried oregano. Stir until well blended and creamy.
  • In a separate bowl, mix the diced cherry tomatoes, minced garlic, chopped basil, and red pepper flakes. Drizzle with olive oil and season with salt and pepper to taste. Allow to marinate for about 5 minutes.
  • Spread the whipped cottage cheese mixture onto toasted baguette slices or crackers, creating a generous layer.
  • Top each slice with the marinated tomato mixture, ensuring an even distribution of the tomatoes and herbs over the cottage cheese.
