Ingredients
  

  • 4 cups seedless watermelon cubed and chilled
  • 1 medium cucumber peeled and chopped
  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons honey adjust based on sweetness preference
  • 1 teaspoon fresh mint leaves chopped
  • 1 cup coconut water for added hydration
  • 1 cup ice cubes for slushie texture
  • salt a pinch to enhance flavors

Instructions
 

  • In a blender, combine the cubed watermelon and chopped cucumber. Blend until smooth, about 1-2 minutes.
  • Add the fresh lime juice, honey, chopped mint leaves, coconut water, and a pinch of salt to the blender. Blend again until well mixed.
  • Add the ice cubes to the blender and blend on high speed until the mixture reaches a slushie consistency, about 1-2 minutes.
  • Taste the slushie and adjust sweetness with more honey if desired. Blend briefly to combine.
  • Pour the slushie into chilled glasses and garnish with additional mint leaves and cucumber slices if desired.

Tip 1: For an extra refreshing twist, freeze the watermelon cubes beforehand.
