2 cups sushi rice

2 ½ cups water

½ cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

1 pound salmon fillet, skinless

⅓ cup mayonnaise (preferably Japanese mayo)

2 tablespoons sriracha (or adjust to taste)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 avocado, sliced

1 sheet nori (seaweed), cut into strips

½ cup green onions, sliced

Sesame seeds, for garnish

Panko breadcrumbs, for topping

Instructions
 

Prepare the Rice:

    - Rinse the sushi rice under cold water until the water runs clear. Drain well.

      - In a medium pot, combine the rinsed rice and water. Bring to a boil, then cover and reduce heat to low. Cook for 20 minutes, or until water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

        Season the Rice:

          - In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice with a wooden spatula, being careful not to mash the rice. Allow it to cool to room temperature.

            Prepare the Salmon Mixture:

              - Preheat your oven to 375°F (190°C).

                - In a bowl, combine the salmon fillet, mayonnaise, sriracha, soy sauce, and sesame oil. Use a fork to flake the salmon and mix everything until well combined.

                  Assemble the Bake:

                    - In a baking dish, spread the seasoned sushi rice evenly across the bottom.

                      - Next, layer the spicy salmon mixture over the rice, spreading it out evenly.

                        - Top the salmon layer with panko breadcrumbs for a crunchy texture.

                          Bake:
