2 cups cooked jasmine rice (preferably day-old for best results)

1 cup fresh pineapple, diced (or canned pineapple, drained)

1/2 cup bell pepper (red or yellow), finely diced

1/2 cup carrots, finely diced

1/2 cup green peas (fresh or frozen)

3 green onions, chopped

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp vegetable oil

1 tsp ginger, minced

1/4 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

Lime wedges for serving

Fresh cilantro or basil for garnish (optional)

Prepare Ingredients: If not using day-old rice, cook the jasmine rice according to package directions and let it cool completely. Ensure all vegetables and pineapple are prepped and ready to go.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil and sesame oil over medium-high heat.

      Sauté Aromatics: Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

        Cook Vegetables: Add the finely diced bell pepper, carrots, and green peas to the skillet. Stir-fry for about 3-4 minutes until they are slightly tender but still vibrant in color.

          Incorporate Pineapple: Add the diced pineapple to the mixture and continue to stir-fry for an additional 2-3 minutes to allow it to caramelize slightly and release its juices.

            Add Rice: Increase the heat to high and add the cooked jasmine rice to the skillet. Mix thoroughly so the rice is well combined with the vegetables and pineapple. Use a spatula to break up any clumps.

              Season: Pour the soy sauce over the rice mixture. Add salt, pepper, and red pepper flakes (if using). Stir well to ensure the rice is evenly seasoned.

                Final Touches: Stir in the chopped green onions and cook for another minute.

                  Serve: Remove from heat and serve hot, garnished with fresh cilantro or basil, and lime wedges on the side for squeezing over the rice.
