1 lb (450g) beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, chopped

1 medium potato, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes (with juice)

6 cups beef broth

2 teaspoons dried thyme

1 teaspoon dried basil

Salt and pepper to taste

2 bay leaves

1 cup frozen peas

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Sear the meat on all sides until browned, about 5-7 minutes. Remove the beef from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Base: Add the carrots, celery, and potato to the pot. Stir well and cook for 5 minutes, allowing the vegetables to soften slightly.

        Combine Ingredients: Return the beef to the pot and add the green beans, diced tomatoes, beef broth, thyme, basil, and bay leaves. Bring the mixture to a boil.

          Simmer the Soup: Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld together.

            Add Peas: In the last 10 minutes of cooking, add the frozen peas to the pot and stir. Adjust the seasoning with additional salt and pepper if necessary.

              Serve: Remove the bay leaves before serving. Ladle the soup into bowls and garnish with fresh chopped parsley. Enjoy the hearty flavors!
