Ingredients
  

  • 12 ounces fettuccine pasta or pasta of choice
  • 2 cups cremini mushrooms sliced
  • 1 tablespoon truffle oil for drizzling
  • 1/2 teaspoon fresh thyme chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter for sautéing
  • 1/4 cup Parmesan cheese grated
  • salt and pepper to taste

Instructions
 

  • Cook the fettuccine pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  • In a large skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the sliced cremini mushrooms to the skillet and cook for about 5-7 minutes until they are browned and have released their moisture. Stir in the fresh thyme and season with salt and pepper.
  • Pour in the heavy cream and bring the mixture to a simmer. Allow it to cook for about 3-4 minutes until slightly thickened, then add the cooked fettuccine to the skillet.
  • Toss the pasta in the sauce, adding reserved pasta water as needed to achieve the desired consistency. Stir in the grated Parmesan cheese and drizzle with truffle oil before serving.
  • Serve hot, garnished with extra Parmesan cheese and a sprinkle of black pepper for added flavor.
