Ingredients

  • 1 cup long-grain white rice rinsed and drained
  • 2 cups whole milk for creaminess
  • 1 cup sweetened condensed milk adds sweetness
  • 1 cup evaporated milk for richness
  • 1/2 cup granulated sugar adjust sweetness to taste
  • 1 teaspoon vanilla extract for flavor
  • 1/2 teaspoon cinnamon for warmth
  • 1 pinch salt to enhance flavors
  • 1 cup whipped cream for topping
  • 2 tablespoons toasted coconut flakes for garnish

Instructions

  • In a medium saucepan, combine the rinsed rice and 2 cups of whole milk. Bring to a gentle boil over medium heat, then reduce to low and cover. Cook for approximately 18-20 minutes, stirring occasionally, until the rice is tender and most of the milk is absorbed.
  • Once the rice is cooked, stir in the sweetened condensed milk, evaporated milk, granulated sugar, vanilla extract, cinnamon, and a pinch of salt. Cook over low heat for an additional 5 minutes, allowing the mixture to thicken slightly while stirring continuously.
  • Remove the saucepan from heat and let it cool for about 10 minutes. The pudding will continue to thicken as it cools. Taste and adjust sweetness if necessary by adding more sugar or condensed milk.
  • To serve, spoon the rice pudding into individual bowls or a large serving dish. Top with whipped cream and sprinkle with toasted coconut flakes for added texture and flavor.

Notes

Tip 1: For a richer flavor, you can use coconut milk instead of whole milk.
Tip 2: Make ahead and refrigerate for up to 3 days; it tastes even better the next day.
Variation: Add fresh fruit like mango or berries for a fruity twist.
