Ingredients
  

2 pounds of Russet potatoes, peeled and quartered

1 cup green cabbage, finely shredded

1 cup kale, finely chopped (optional for extra greens)

1/2 cup scallions (green onions), finely chopped

4 tablespoons unsalted butter, plus more for serving

1 cup whole milk or heavy cream

Salt and pepper, to taste

A pinch of nutmeg (optional)

Instructions
 

Boil the Potatoes: Place the peeled and quartered potatoes in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.

    Prepare the Greens: While the potatoes are boiling, melt 2 tablespoons of butter in a large skillet over medium heat. Add the shredded cabbage and kale (if using) and sauté until softened, about 4-5 minutes. Add the chopped scallions and cook for an additional 2 minutes. Set aside.

      Mash the Potatoes: Once the potatoes are cooked, drain them and return them to the pot. Add the remaining 2 tablespoons of butter, milk (or cream), and a pinch of nutmeg if desired. Mash the potatoes until smooth and creamy. Season generously with salt and pepper.

        Combine and Serve: Gently fold in the sautéed cabbage and scallions into the mashed potatoes until well combined. Adjust seasoning if necessary. Serve hot with an extra pat of butter melting on top.

          Garnish (Optional): For an extra touch, sprinkle some extra chopped scallions on top before serving.
