The Crunch That Turns Dinner

This the crunch that turns dinner is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

2 cups cooked quinoa

1 cup chickpeas, drained and rinsed

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1 avocado, diced

1/4 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup sunflower seeds

1/4 cup tahini

2 tablespoons lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the cooked quinoa, chickpeas, diced red bell pepper, cherry tomatoes, cucumber, avocado, and red onion.

    Add in the crumbled feta cheese and chopped parsley to the vegetable and quinoa mixture.

      In a small bowl, whisk together the tahini, lemon juice, olive oil, salt, and pepper until smooth. Adjust seasoning as needed.

        Pour the tahini dressing over the quinoa and vegetable mixture and gently toss until everything is well-coated.

          Sprinkle the sunflower seeds on top for that satisfying crunch.

            Serve immediately or let it chill in the refrigerator for 30 minutes for the flavors to meld.
