12 oz spaghetti

2 cups fresh spinach, roughly chopped

1 cup sun-dried tomatoes (in oil), drained and chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Spaghetti:

    - Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and reserve about 1/2 cup of the pasta water.

      Sauté the Spinach and Garlic:

        - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

          - Add the chopped spinach and cook until wilted, about 2–3 minutes.

            Make the Sauce:

              - Stir in the chopped sun-dried tomatoes and Italian seasoning. Pour in the heavy cream and bring to a gentle simmer.

                - Allow the sauce to thicken slightly for about 3–4 minutes.

                  Combine Pasta and Sauce:

                    - Add the cooked spaghetti to the skillet with the sun-dried tomato cream sauce. Toss to coat the spaghetti fully. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.

                      Finish with Parmesan:

                        - Stir in the grated Parmesan cheese, mixing well until the cheese has melted into the sauce. Season with salt and pepper to taste.

                          Serve:

                            - Divide the spaghetti among plates and garnish with fresh basil leaves if desired. Enjoy your creamy, delicious pasta dish!
