Ingredients
  

2 cans of high-quality tuna in olive oil, drained

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/3 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

2 tablespoons capers, rinsed and drained

3 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Zest and juice of 1 lemon

Fresh arugula or mixed greens for serving (optional)

Instructions
 

In a large mixing bowl, combine the drained tuna, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and capers. Mix gently to avoid breaking up the tuna too much.

    In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, lemon zest, lemon juice, salt, and pepper until well combined.

      Pour the dressing over the tuna salad mixture and gently fold everything together until all the ingredients are evenly coated.

        Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.

          For a fresher presentation, serve the tuna salad over a bed of arugula or mixed greens, or enjoy it on its own.

            Chill in the refrigerator for about 30 minutes to let the flavors meld together before serving.
