Texas Style Chili

Ingredients
  

2 lbs ground beef (preferably chuck)

1 lb smoked sausage, sliced

1 large onion, diced

4 cloves garlic, minced

2 bell peppers (1 red, 1 green), diced

1 can (28 oz) crushed tomatoes

2 cans (15 oz each) kidney beans, drained and rinsed

2 tbsp chili powder

1 tbsp cumin

1 tbsp smoked paprika

1 tsp oregano

1 tsp cayenne pepper (adjust to heat preference)

2 cups beef broth

Salt and black pepper to taste

2 tbsp olive oil

Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, jalapeños

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onions and sauté until they start to soften, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the ground beef and smoked sausage to the pot, breaking up the beef with a spoon, and cook until browned, about 8-10 minutes.

        Once the meat is browned, stir in the diced bell peppers and cook for another 5 minutes until they begin to soften.

          Sprinkle the chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper over the meat and vegetables. Stir well to combine, cooking for an additional minute to toast the spices.

            Pour in the crushed tomatoes and beef broth, stirring until everything is well mixed.

              Bring the chili to a boil, then lower the heat and let it simmer uncovered for 30-40 minutes, stirring occasionally. This allows the flavors to meld and the chili to thicken.

                Add the kidney beans during the last 10 minutes of cooking, ensuring they're heated through. Adjust seasoning if needed.

                  Serve hot, garnished with optional toppings like shredded cheddar cheese, sour cream, chopped green onions, or sliced jalapeños.
