4 salmon fillets (about 6 oz each)

1/2 cup teriyaki sauce (store-bought or homemade)

2 tablespoons honey

1 tablespoon grated ginger

2 tablespoons sesame oil

1 cup jasmine rice

2 cups water or broth (for cooking rice)

1 cup broccoli florets

1 cup snap peas

1 carrot, thinly sliced

4 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Optional: sliced avocado for serving

Marinate the Salmon: In a bowl, mix the teriyaki sauce, honey, and grated ginger together. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 2 cups of water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes, then fluff with a fork.

      Prepare the Vegetables: While the rice is cooking, heat sesame oil in a skillet over medium heat. Add broccoli, snap peas, and carrots. Sauté for about 5-7 minutes or until the vegetables are tender-crisp. Season lightly with salt and pepper, then remove from heat.

        Cook the Salmon: Preheat a grill pan or skillet over medium-high heat. Remove the salmon from the marinade, reserving the marinade. Cook the salmon for about 4-5 minutes per side, or until cooked through and the edges are caramelized. Drizzle the reserved marinade over the salmon during the last minute of cooking.

          Assemble the Bowls: Divide the cooked jasmine rice among four bowls. Top with sautéed vegetables and a salmon fillet. Garnish with chopped green onions and sesame seeds. If desired, add sliced avocado on the side.
