4 salmon fillets (6 oz each)

1/2 cup low-sodium soy sauce

1/4 cup honey or maple syrup

2 tablespoons rice vinegar

2 tablespoons minced fresh ginger

2 cloves garlic, minced

2 tablespoons sesame oil

2 cups cooked brown rice or quinoa

1 cup broccoli florets

1 cup shredded carrots

1 cup edamame (shelled)

2 green onions, sliced

1 tablespoon sesame seeds

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, honey (or maple syrup), rice vinegar, minced ginger, and minced garlic. Bring to a gentle simmer and cook for about 5 minutes until slightly thickened. Remove from heat and set aside.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Allow the salmon to marinate for at least 15 minutes (you can marinate for up to 1 hour in the refrigerator for more flavor).

      Prepare the Vegetables: While the salmon is marinating, steam the broccoli florets until tender, about 4-5 minutes. Set aside. In a large skillet, heat sesame oil over medium-high heat. Add shredded carrots and edamame, sautéing for about 3-4 minutes until heated through.

        Cook the Salmon: Preheat your grill or skillet over medium heat. Remove the salmon from the marinade (discard the marinade) and grill or sear the salmon for about 4-5 minutes on each side or until it's cooked to your desired doneness (internal temperature should reach 145°F/63°C).

          Assemble the Bowls: In a bowl, layer a scoop of cooked brown rice or quinoa as the base. Place a salmon fillet on top, then scatter the steamed broccoli, sautéed carrots, and edamame around the salmon.

            Add Finishing Touches: Drizzle the remaining teriyaki sauce over the top, sprinkle with sesame seeds and sliced green onions. Garnish with fresh cilantro if desired.
