Ingredients
  

  • 1 cup tamarind pulp soaked in warm water for 10 minutes
  • 4 cups water divided
  • 1/2 cup granulated sugar adjust to taste
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup ice cubes for serving
  • 1 whole lime sliced for garnish
  • mint leaves for garnish

Instructions
 

  • In a bowl, combine the tamarind pulp with 2 cups of warm water. Use your hands to mash and dissolve the pulp into the water, creating a tamarind concentrate.
  • Strain the tamarind mixture through a fine mesh sieve into a pitcher, discarding any solids. Add the remaining 2 cups of cold water to dilute the concentrate.
  • Stir in the granulated sugar, lime juice, vanilla extract, and salt until fully dissolved. Taste and adjust sweetness or acidity as desired.
  • Chill the drink in the refrigerator for at least 30 minutes to let the flavors meld together.
  • To serve, fill glasses with ice cubes and pour the chilled tamarind agua fresca over the ice.
  • Garnish each glass with a lime slice and a few mint leaves for a refreshing touch.

Tip 1: For a more intense flavor, allow the tamarind to soak longer.
Tip 2: Store any leftovers in the refrigerator for up to 3 days.
Variation: Add a splash of sparkling water for a fizzy twist.
