1 lb ground beef or turkey

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1 cup lettuce, shredded

1 ripe avocado, diced

1 cup Doritos, crushed (your favorite flavor)

1/4 cup sour cream

1/4 cup salsa

Fresh cilantro, chopped (optional)

Olive oil

Salt and pepper to taste

Prepare the Rice: In a medium pot, cook the jasmine rice according to package instructions. Typically, this involves rinsing the rice and boiling it in 2 cups of water until tender, about 15 minutes.
