For the Peach Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup unsalted butter, softened

4 large eggs

1 teaspoon vanilla extract

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup buttermilk

2 cups diced fresh peaches (peeled)

For the Brown Sugar Frosting:

1 cup unsalted butter, softened

1 cup brown sugar, packed

4 cups powdered sugar

5 tablespoons heavy cream

1 teaspoon vanilla extract

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Prepare the Peach Cake: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes). Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

        Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined. Gently fold in the diced peaches.

          Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

            Make the Brown Sugar Frosting: In a medium saucepan over medium heat, melt the unsalted butter and brown sugar together until bubbly. Cook for 2 minutes, stirring constantly. Remove from heat and let it cool for 10 minutes.

              Add the Remaining Ingredients: Once cooled, transfer the brown sugar mixture to a large mixing bowl. Gradually mix in the powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Beat on medium-high speed until creamy and fluffy (about 3-4 minutes).

                Assemble the Cake: Place one layer of the peach cake on a serving plate. Spread a generous layer of brown sugar frosting over the top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.

                  Garnish (optional): Decorate with extra diced peaches or peach slices for a beautiful presentation.
