4 boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce

2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

1 tablespoon sesame oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 bell pepper, sliced (red or yellow for color)

1 medium onion, sliced

1 cup broccoli florets (fresh or frozen)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together honey, soy sauce, Sriracha, apple cider vinegar, minced garlic, ginger, sesame oil, salt, and pepper. Add the chicken thighs to the bowl, ensuring they are fully coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for best flavor).

    Prepare the Vegetables: While the chicken marinates, prepare the vegetables. Slice the bell pepper and onion, and wash the broccoli florets. Set aside.

      Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken thighs for about 5-6 minutes on each side, or until they're golden brown and cooked through. (Internal temperature should reach 165°F / 74°C). Once cooked, remove the chicken from the skillet and set aside.

        Cook the Vegetables: In the same skillet, add the bell pepper, onion, and broccoli. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

          Make the Sauce: Pour the reserved marinade into the skillet with the vegetables. Bring the mixture to a simmer and cook for about 2-3 minutes, allowing the sauce to thicken slightly.

            Combine: Return the chicken to the skillet, tossing it gently with the vegetables and sauce until everything is well coated and heated through.

              Serve: Remove from heat and serve hot. Garnish with chopped green onions and a sprinkle of sesame seeds for added crunch and flavor.
