1 cup rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1/2 cup cooked and mashed sweet potato

2 tablespoons maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Pinch of salt

2 tablespoons chia seeds (optional, for extra thickness)

1/4 cup pecans or walnuts, chopped (for topping)

Fresh whipped cream (for serving, optional)

Instructions
 

In a medium-sized mixing bowl, combine the rolled oats, almond milk, mashed sweet potato, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Stir until all the ingredients are well combined.

    If using chia seeds, mix them in at this step to add thickness and texture.

      Divide the mixture evenly into two mason jars or airtight containers.

        Seal the jars and place them in the refrigerator for at least 4 hours or overnight to allow the oats to soak up the flavors and the liquid.

          The next morning, give the oats a good stir. If the mixture is too thick, you can add a splash of almond milk to reach your desired consistency.
