1 lb (450g) boneless, skinless chicken breasts, diced

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

Fresh cilantro, chopped (for garnish)

Sliced avocado (for serving)

Sour cream (optional, for serving)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for about 3-4 minutes, until the onion is translucent and fragrant.

    Brown the Chicken: Add the diced chicken to the pot. Cook for about 5-7 minutes, stirring often, until the chicken is lightly browned on all sides.

      Add Spices: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional 2 minutes, allowing the spices to toast and release their flavors.

        Incorporate Vegetables: Add the diced sweet potatoes, black beans, corn, and the can of diced tomatoes (including the juice) to the pot. Mix well.

          Pour in the Broth: Add the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the sweet potatoes are tender and the chicken is cooked through.
