Sweet Heat Mango Chicken – Trendy Summer Dinner

This sweet heat mango chicken – trendy summer dinner is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

2 boneless, skinless chicken breasts

1 ripe mango, diced

2 tablespoons honey

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon fresh ginger, grated

1 teaspoon garlic, minced

½ teaspoon red pepper flakes (adjust for heat preference)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine honey, soy sauce, lime juice, grated ginger, minced garlic, red pepper flakes, salt, and pepper. Add the chicken breasts and coat well with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes to 2 hours for maximum flavor.

    Prepare the Mango: While the chicken is marinating, prepare the mango. Dice the mango into small cubes and set it aside.

      Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the marinated chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and golden brown. (Internal temperature should reach 165°F/75°C.)

        Add the Mango: In the last couple of minutes of cooking, add the diced mango to the skillet with the chicken. Stir gently to combine and allow the mango to heat through, about 1-2 minutes.

          Serve it Up: Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing. Arrange the sliced chicken on a serving plate, spoon the sweet heat mango sauce from the skillet over the top, and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zing.

            Enjoy the Meal: This dish pairs wonderfully with jasmine rice or a light summer salad.
