Ingredients

1 pound ground beef or turkey

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

1/4 cup fresh cilantro, chopped

1 large egg

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sriracha (optional, for extra heat)

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, combine ground beef or turkey, breadcrumbs, Parmesan cheese, green onions, cilantro, egg, minced garlic, salt, and black pepper. Mix until all the ingredients are well incorporated.

Form the Meatballs: Using your hands, roll the mixture into 1-inch meatballs and place them on a baking sheet. You should have around 24 meatballs.

Brown the Meatballs (Optional): For added flavor, you can briefly brown the meatballs in a skillet over medium heat for 3-4 minutes until golden. This step is optional but will enhance the meatball’s texture.

Prepare the Sauce: In a separate bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and sriracha (if using). This sauce will be the base for cooking the meatballs in the crockpot.

Combine Everything in the Crockpot: Place the meatballs in the crockpot and pour the sweet chili sauce mixture over them, ensuring they are evenly coated.

Cook the Meatballs: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the meatballs are cooked through and tender.

Serve: Once ready, give the meatballs a gentle stir to coat them in the sauce. Serve hot as an appetizer or over rice for a complete meal.
