4 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup cherry tomatoes, halved

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Slice each zucchini in half lengthwise and scoop out the center using a spoon, creating little boats. Keep the scooped-out flesh for later.

      Make the Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, cherry tomatoes, minced garlic, oregano, basil, salt, and pepper. Also, add the scooped-out zucchini flesh and mix until well combined.

        Stuff the Zucchini: Place the zucchini halves on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Then generously fill each zucchini half with the cheese mixture.

          Top with Cheese: Sprinkle the remaining mozzarella cheese on top of each stuffed zucchini boat.

            Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the zucchini are tender and the cheese is bubbly and golden.
