Ingredients
  

1 cup uncooked jasmine rice

2 cups chicken broth

2 tablespoons olive oil

2 boneless, skinless chicken breasts

1 teaspoon chili powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup corn kernels (fresh or frozen)

1/2 cup crumbled feta cheese

1/4 cup mayonnaise

1 tablespoon lime juice

1/4 teaspoon garlic powder

1 avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and chicken broth. Bring to a boil, reduce heat to low, cover, and let simmer for about 15 minutes or until rice is tender and liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken: While the rice cooks, season the chicken breasts with chili powder, paprika, salt, and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let rest for a few minutes before slicing.

      Sauté the Corn: In the same skillet, add the corn kernels. Sauté for about 3-4 minutes until slightly caramelized. Remove from heat.

        Make the Sauce: In a small bowl, mix mayonnaise, lime juice, garlic powder, and a pinch of salt until smooth.

          Assemble the Bowl: In serving bowls, layer the rice, followed by sliced chicken, sautéed corn, diced avocado, and crumbled feta cheese. Drizzle with the lime mayo sauce.

            Garnish & Serve: Top each bowl with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
