Ingredients
  

1 cup cooked white or brown rice

2 boneless, skinless chicken breasts

2 cups corn (fresh, frozen, or canned)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

1/2 cup crumbled feta cheese

1/4 cup mayonnaise

2 tablespoons lime juice

1/4 cup fresh cilantro, chopped

1 avocado, diced

1 lime, cut into wedges

Instructions
 

Prepare the Chicken:

    Season the chicken breasts with smoked paprika, garlic powder, cumin, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes before slicing.

      Cook the Corn:

        In the same skillet, add the corn and cook for 4-5 minutes until it is heated through and slightly charred. You can add a pinch of salt and pepper for extra flavor.

          Make the Sauce:

            In a small bowl, mix the mayonnaise and lime juice together. This will be your creamy dressing for the bowl.

              Assemble the Bowl:

                Start by placing a serving of rice at the bottom of each bowl. Top with sliced chicken, charred corn, diced avocado, and crumbled feta cheese.

                  Garnish:

                    Drizzle the lime mayonnaise over the top, then sprinkle with fresh cilantro. Add lime wedges on the side for an extra burst of flavor if desired.
