For the Cheesecake Layer:

8 oz (225 g) cream cheese, softened

1/2 cup (100 g) granulated sugar

1 tsp vanilla extract

1 cup (240 ml) heavy whipping cream

1/4 cup (30 g) powdered sugar

For the Strawberry Layer:

2 cups (300 g) fresh strawberries, hulled and sliced

2 tbsp granulated sugar

1 tbsp lemon juice

For the Shortcake Crust:

1 cup (120 g) shortbread cookies, crushed

4 tbsp unsalted butter, melted

1 tbsp granulated sugar

For Topping:

Whipped cream (optional)

Extra sliced strawberries for garnish

Fresh mint leaves for garnish

Instructions
 

Prepare the Strawberry Layer:

    - In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Mix gently and let sit for about 10-15 minutes until the strawberries release their juices and become syrupy.

      Make the Shortcake Crust:

        - In a mixing bowl, combine crushed shortbread cookies, melted butter, and sugar. Stir until the mixture resembles wet sand.

          - Place about 1-2 tablespoons of the crust mixture into the bottom of each serving cup, pressing down gently to form an even layer.

            Prepare the Cheesecake Layer:

              - In a large bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.

                - In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.

                  - Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful not to deflate the whipped cream.

                    Assemble the Cups:

                      - In each cup, add a layer of the cheesecake filling on top of the shortcake crust, filling about halfway.

                        - Spoon a layer of the macerated strawberry mixture over the cheesecake layer, distributing evenly.

                          - Add another layer of cheesecake filling on top of the strawberries, smoothing it out with a spatula.

                            Chill:

                              - Cover the cups with plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld and the cheesecake to set.

                                Serve:

                                  - Before serving, top each cheesecake cup with whipped cream, extra sliced strawberries, and fresh mint leaves for garnish. Optional: drizzle with chocolate sauce for an extra indulgence.
