Ingredients
  

1 cup fresh strawberries, hulled and chopped

1 box (15.25 oz) strawberry cake mix

1/2 cup Cool Whip (thawed)

1 large egg

1/2 teaspoon vanilla extract

1/2 cup powdered sugar (for dusting)

Optional: Extra strawberries or sprinkles for decoration

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a mixing bowl, combine the strawberry cake mix, chopped strawberries, egg, Cool Whip, and vanilla extract. Stir until all ingredients are well combined; the dough will be slightly sticky.

      Use a cookie scoop or tablespoon to drop spoonfuls of the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

        Once all the dough is portioned out, lightly dust the tops of the cookies with powdered sugar.

          Bake in the preheated oven for 10-12 minutes or until the edges are set and the tops are slightly cracked.

            Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

              If desired, decorate with additional chopped strawberries or sprinkles before serving.
