1 cup fresh strawberries, hulled and chopped

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup graham cracker crumbs

1/2 cup white chocolate chips

1 tbsp coconut oil (or vegetable shortening)

Extra graham cracker crumbs for rolling

Fresh strawberries for garnish (optional)

Instructions
 

Prepare the Strawberries: In a mixing bowl, mash the chopped strawberries with a fork until they are chunky but liquid ('strawberry sauce' style). Set aside.

    Make the Cheesecake Mixture: In another bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy. Gradually add powdered sugar and vanilla extract, mixing until well combined.

      Combine: Gently fold the mashed strawberries into the cream cheese mixture, ensuring an even distribution but leaving some strawberry pieces for texture.

        Form the Balls: Scoop out about 1 tablespoon of the cheesecake mixture and roll it into a ball. Place the truffles on a parchment-lined baking sheet. Repeat until all the mixture is used. Chill the balls in the freezer for at least 30 minutes to firm up.

          Melt the Chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

            Coat the Truffles: Once the truffles are firm, dip each ball into the melted white chocolate, making sure they are fully coated, then roll them in extra graham cracker crumbs for that authentic cheesecake crust experience. Place them back on the baking sheet.

              Set the Chocolate: Allow the coated truffles to sit for about 10 minutes, or until the chocolate has completely set.
