Ingredients

4 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons soy sauce

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions

Prepare the Marinade: In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, cumin, paprika, salt, and pepper until well combined.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Remove the chicken from the marinade (reserving the marinade for later) and add the chicken to the skillet. Cook for 5-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).

Add the Marinade: Once the chicken is cooked, pour the reserved marinade into the skillet. Bring to a simmer and cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken.

Serve: Remove from heat, garnish with fresh cilantro if desired, and serve with lime wedges. Enjoy the chicken alongside rice or a fresh salad!
