Spinach & Ricotta Lasagna Roll-Ups

9 lasagna noodles

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 cup marinara sauce

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and rinse with cold water to prevent sticking.

      Prepare the Filling: In a large bowl, combine chopped spinach, ricotta cheese, 1/2 cup mozzarella cheese, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well-combined.

        Assemble the Roll-Ups: Spread a thin layer of marinara sauce (about 1/4 cup) on the bottom of a 9x13 inch baking dish. Take one lasagna noodle, and on a flat surface, spread about 1/4 cup of the spinach and ricotta mixture over the noodle. Carefully roll it up from one end to the other and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.

          Top with Sauce and Cheese: Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top, making sure to cover all the noodles. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.

              Garnish and Serve: Allow the lasagna roll-ups to cool for a few minutes. Garnish with fresh basil before serving.
