Ingredients
  

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1/2 cup cream cheese, softened

1 teaspoon dried oregano

1 teaspoon lemon juice

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (for garnish)

Preheat the Oven: Set your oven to 375°F (190°C).

    Prepare the Filling: In a large bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, cream cheese, dried oregano, lemon juice, and season with salt and pepper.

      Prepare Chicken Breasts: Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken breast pocket with the spinach and feta mixture. Use toothpicks to secure the openings if necessary.

          Sear the Chicken: In a large oven-proof skillet, heat olive oil over medium heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side until golden brown.

            Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

              Garnish and Serve: Once done, remove the skillet from the oven. Let the chicken rest for a few minutes, then sprinkle with freshly chopped parsley for garnish. Serve hot with your choice of sides.
