Ingredients
  

1 lb (450g) fresh sushi-grade salmon, skin removed and diced

1 cup sushi rice

1 ¼ cups water

1 tbsp rice vinegar

1 ½ tbsp sugar

1 tsp salt

½ cup mayonnaise

2 tbsp Sriracha (adjust for spiciness)

1 tbsp soy sauce

1 tsp sesame oil

1 avocado, peeled, pitted, and sliced

¼ cup green onions, finely chopped

1 sheet nori, cut into small pieces (for garnish)

Toasted sesame seeds (for garnish)

Pickled ginger and wasabi (for serving, optional)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker (or a pot). Cook according to the rice cooker instructions (or bring to a boil, then cover and simmer for about 18 minutes until water is absorbed).

    Season the Rice: Once cooked, transfer the rice to a large bowl. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved, then pour it over the hot rice. Gently fold the rice with a spatula to combine, being careful not to mash it. Allow it to cool slightly.

      Make the Spicy Salmon Mixture: In a separate bowl, combine the diced salmon, mayonnaise, Sriracha, soy sauce, and sesame oil. Mix well until all ingredients are incorporated.

        Assemble the Bake: Preheat your oven to 375°F (190°C). In a baking dish, spread the sushi rice evenly across the bottom. Layer the spicy salmon mixture on top of the rice.

          Bake: Place the dish in the preheated oven and bake for 20-25 minutes, until the top is slightly golden and bubbly.

            Garnish: Remove the sushi bake from the oven and let it cool for a few minutes. Top with avocado slices, green onions, nori pieces, and toasted sesame seeds.

              Serve: Cut into squares and serve warm, accompanied by pickled ginger and wasabi if desired.
