12 oz fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, sliced into strips

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain, reserving about 1 cup of pasta water, and set aside.

    Prepare the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken strips with Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and sauté until translucent, about 3 minutes. Add the minced garlic and sliced red bell pepper, cooking for an additional 2-3 minutes until softened.

        Make the Sauce: Lower the heat to medium and pour in the heavy cream. Stir to combine and let it simmer for 2-3 minutes, allowing it to thicken slightly. Gradually add the grated Parmesan cheese, stirring continuously until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

          Combine Everything: Add the cooked fettuccine and seasoned chicken back to the skillet, tossing to coat everything in the creamy Cajun sauce. Cook for an additional 2 minutes just to heat everything through.

            Serve: Garnish with fresh parsley and additional Parmesan cheese if desired. Serve hot and enjoy your spicy indulgence!
