Ingredients

2 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 tsp vanilla extract

½ tsp almond extract (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, using a hand mixer or stand mixer, cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract (if using) until well combined.

Combine Ingredients: Gradually add the dry mixture to the wet mixture, mixing just until incorporated. Do not overmix.

Shape the Cookies: Scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto the prepared baking sheet about 2 inches apart.

Flatten Slightly: For a classic Southern tea cake appearance, gently flatten the dough balls with the bottom of a glass or your palm.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers will be soft.

Cool and Dust: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. If desired, dust with powdered sugar before serving.

Enjoy: Serve these delightful tea cakes with a cup of tea for an authentic Southern treat!
