Sweet potatoes are more than just a versatile ingredient; they are a nutritional powerhouse. High in fiber, vitamins A and C, and antioxidants, sweet potatoes offer a myriad of health benefits, making them an excellent choice for any meal. Their vibrant orange flesh is rich in beta-carotene, which is converted into vitamin A in the body, supporting eye health, immune function, and skin integrity. Additionally, sweet potatoes are known for their low glycemic index, making them a healthier carbohydrate option for those monitoring their blood sugar levels.

Ingredients

4 large sweet potatoes (about 3 lbs)

½ cup maple syrup

½ cup unsalted butter, melted

¾ cup whole milk

2 large eggs

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 teaspoon salt

1 cup pecans, chopped

1 cup mini marshmallows (optional for topping)

¼ cup brown sugar (for topping)

Instructions

Preheat the Oven:

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

      Prepare Sweet Potatoes:

Peel and cut the sweet potatoes into large chunks. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 20-25 minutes. Drain and let cool slightly.

          Mash Sweet Potatoes:

In a large mixing bowl, mash the cooked sweet potatoes until smooth.

              Mix Ingredients:

Add the melted butter, maple syrup, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mix well until all ingredients are fully combined and smooth.

                  Transfer to Baking Dish:

Pour the sweet potato mixture into the prepared baking dish and spread it evenly.

                      Prepare Topping:

In a small bowl, combine the chopped pecans, brown sugar, and additional cinnamon (if desired). Sprinkle this topping evenly over the sweet potato mixture.

                          Marshmallow Option:

If using marshmallows, sprinkle them evenly over the topping.

                              Bake:

Bake the casserole in the preheated oven for 30-35 minutes, until heated through and the topping is golden brown (and marshmallows are toasted, if using).

                                  Serve:

Let the casserole cool for a few minutes before serving. Enjoy your Southern Maple Sweet Potato Casserole warm as a delightful side dish!
