1 pound pork tenderloin, sliced into thin strips

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon brown sugar

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (red or yellow), sliced

1 cup pineapple chunks (fresh or canned)

1 cup snap peas

3 cloves garlic, minced

1 teaspoon ginger, minced

3 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Marinate the Pork: In a bowl, combine the sliced pork, soy sauce, rice vinegar, brown sugar, and cornstarch. Mix well and let it marinate for at least 15 minutes to absorb the flavors.

    Prepare Vegetables: While the pork is marinating, prepare your bell pepper, snap peas, and pineapple chunks, ensuring they are cut and ready to go.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

        Stir-Fry the Pork: Add the marinated pork to the skillet in a single layer. Cook for about 2-3 minutes without stirring to get a nice sear, then stir-fry until the pork is browned and cooked through, about 5-6 minutes. Remove the pork from the skillet and set aside.

          Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add minced garlic and ginger, and sauté for 30 seconds until fragrant. Then, add the bell pepper, snap peas, and pineapple chunks. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

            Combine Ingredients: Return the cooked pork to the skillet with the vegetables. Toss everything together, allowing the flavors to meld for another 2-3 minutes.

              Serve: Garnish with sliced green onions and a sprinkle of sesame seeds. Serve hot over steamed rice or noodles.
