Smoky Corn and Shrimp Fritters

This smoky corn and shrimp fritters is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

1 cup fresh corn kernels (or frozen, thawed)

1 cup cooked shrimp, chopped

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (adjust to taste)

1/2 tsp baking powder

1/2 cup milk

1 large egg

2 green onions, finely chopped

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped (optional)

Vegetable oil, for frying

Prepare the mixture: In a large bowl, combine the flour, cornmeal, smoked paprika, garlic powder, onion powder, cayenne pepper, baking powder, salt, and pepper. Mix well to combine dry ingredients.

    Mix wet ingredients: In a separate bowl, whisk together the milk and egg until smooth.

      Combine ingredients: Add the corn kernels, chopped shrimp, green onions, and cilantro (if using) to the dry mixture. Pour in the wet mixture and stir until just combined. Do not overmix; the batter should be slightly lumpy.

        Heat the oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until it shimmers.

          Fry the fritters: Using a tablespoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

            Drain excess oil: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Sprinkle lightly with salt while still hot.

              Serve: Serve the fritters warm with a dipping sauce of your choice, such as a spicy aioli or tangy tartar sauce. Enjoy!
