12 oz fettuccine pasta

1 lb smoked sausage, sliced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

3 tbsp unsalted butter

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 tsp Cajun seasoning

1/2 tsp smoked paprika

1/2 tsp black pepper

1/4 tsp cayenne pepper (adjust to taste)

Salt to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced smoked sausage and cook for about 5-7 minutes until browned and heated through. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of butter. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

        Prepare the Alfredo Sauce: Pour in the heavy cream, stirring to combine. Allow it to simmer for a few minutes to thicken slightly. Reduce the heat and add the Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

          Season the Sauce: Add the Cajun seasoning, smoked paprika, black pepper, cayenne pepper, and salt. Stir well to incorporate all the flavors into the sauce.

            Combine Everything: Add the cooked fettuccine and the smoked sausage back into the skillet. Toss everything together until the pasta is well coated with the Alfredo sauce.

              Serve: Plate the Smoked Sausage Cajun Alfredo and garnish with sliced green onions and fresh parsley. Serve immediately and enjoy!
