12 oz fettuccine pasta

1 lb smoked sausage, sliced (preferably Andouille or your choice)

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 red bell pepper, diced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon Cajun seasoning

½ teaspoon black pepper

Salt to taste

2 green onions, sliced for garnish

Fresh parsley, chopped for garnish

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain, reserving about ½ cup of the pasta water, and set aside.

    Sauté Sausage: In a large skillet or frying pan, heat olive oil over medium heat. Add the sliced smoked sausage and cook for 4-5 minutes until browned. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add minced garlic, chopped onion, and diced red bell pepper. Sauté for about 3-4 minutes or until vegetables are tender.

        Make the Alfredo Sauce: Lower the heat to medium-low. Pour in the heavy cream, stirring continuously. Add the Cajun seasoning, black pepper, and a pinch of salt. Let the sauce simmer for about 2-3 minutes until slightly thickened.

          Combine Ingredients: Stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

            Mix it All: Return the cooked smoked sausage and the drained fettuccine to the skillet. Toss everything together until the pasta is well coated with the creamy Cajun Alfredo sauce.
