Ingredients
  

  • 1 pound ground beef preferably 80/20 for flavor
  • 1 packet taco seasoning your favorite brand
  • 8 small corn tortillas for best results use fresh or homemade
  • 1 cup shredded cheddar cheese or Mexican blend cheese
  • 1 cup refried beans canned or homemade
  • 1 medium avocado sliced for topping
  • 1 cup shredded lettuce for freshness
  • 1/2 cup sour cream for drizzling
  • 1 tablespoon olive oil for frying
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Instructions
 

  • In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  • Once the beef is browned, drain excess fat and stir in the taco seasoning and 1/4 cup of water. Simmer for another 3-5 minutes until well combined.
  • In a separate large skillet, heat olive oil over medium-high heat. Add a tortilla to the skillet, spread a layer of refried beans, then top with a portion of the seasoned beef and a sprinkle of cheese.
  • Using a spatula, press down on the tortilla to flatten it, then cook for 3-4 minutes until crispy and golden brown. Flip and repeat on the other side.
  • Remove the smashed taco from the skillet and allow to cool slightly. Repeat with remaining tortillas and filling.
  • Serve the smashed tacos topped with shredded lettuce, sliced avocado, and a drizzle of sour cream.
