Ingredients
  

4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 medium onion, diced

4 cloves garlic, minced

1 large lemon (zested and juiced)

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1/2 cup frozen peas

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, paprika, oregano, and thyme. Squeeze half of the lemon juice over the chicken and let it marinate for about 15-20 minutes for enhanced flavor.

    Layer the Ingredients: In the bottom of the slow cooker, place the diced onion and minced garlic. Add the rice on top of the onion mixture, spreading it evenly.

      Add Chicken and Broth: Place the marinated chicken thighs on top of the rice. Pour the chicken broth over the chicken and rice mixture, ensuring all the rice is submerged. Add the lemon zest and the remaining lemon juice.

        Cooking Process: Cover the slow cooker and set it on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is fully cooked and tender, and the rice has absorbed the broth.

          Finish with Veggies: In the last 30 minutes of cooking, add the frozen peas to the slow cooker, stirring gently to incorporate. Adjust seasoning if needed.

            Serve: Once done, gently fluff the rice with a fork, serve the chicken over the rice, and garnish with fresh parsley for a pop of color and flavor.
