1.5 lbs boneless, skinless chicken thighs

¼ cup honey

¼ cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional)

2 cups broccoli florets

1 cup baby carrots, halved

1 cup bell peppers, sliced (any color)

1 cup snap peas

Salt and pepper to taste

2 tablespoons cornstarch (optional for thickening)

2 tablespoons water (optional for thickening)

Cooked rice or quinoa for serving

Instructions
 

In a bowl, whisk together honey, soy sauce, minced garlic, ginger, rice vinegar, sesame oil, and red pepper flakes to create the sauce.

    Place the boneless chicken thighs at the bottom of the slow cooker.

      Pour the honey garlic sauce over the chicken, ensuring it is well coated.

        Add the broccoli florets, baby carrots, bell peppers, and snap peas on top of the chicken.

          Season with salt and pepper to taste, mixing gently to combine with the sauce.

            Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and cooked through.

              (Optional) To thicken the sauce, mix cornstarch and water in a small bowl. Add this mixture to the slow cooker in the last 30 minutes of cooking, stirring gently.

                Once cooked, shred the chicken with two forks or leave it whole, as preferred. Serve over cooked rice or quinoa, and spoon the delicious veggies and sauce over the top.
