Ingredients
  

  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 cups canned white beans drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • salt to taste

Instructions
 

  • In a skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant. Remove from heat.
  • In the slow cooker, combine the chicken thighs, drained white beans, sautéed garlic, chicken broth, heavy cream, thyme, rosemary, and black pepper. Stir well to combine.
  • Cover the slow cooker and cook on low for 4 hours or on high for 2 hours, until the chicken is cooked through and tender.
  • Before serving, taste and adjust the seasoning with salt and more pepper if needed. Stir gently to combine everything again.

Notes

Tip 1: For extra creaminess, you can blend a portion of the beans before adding them to the slow cooker.
Tip 2: This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
