Slow Cooker Creamy Tomato Basil Chicken Recipe

This slow cooker creamy tomato basil chicken recipe is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients

4 boneless, skinless chicken breasts

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sauté the Aromatics: In a skillet over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Next, add the minced garlic and cook for an additional minute, until fragrant.

Combine Ingredients in Slow Cooker: In the slow cooker, place the seared chicken breasts. Pour the crushed tomatoes, chicken broth, heavy cream, sautéed onion and garlic, dried oregano, dried basil, and red pepper flakes (if using) over the chicken. Stir gently to combine all the ingredients.

Cook: Cover the slow cooker with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Add Cheese: About 15 minutes before serving, stir in the grated Parmesan cheese, allowing it to melt into the sauce and create a creamy texture.

Serve: Once done, shred the chicken in the sauce using two forks. Taste and adjust seasoning with more salt, pepper, or additional herbs if needed.

Garnish: Serve the creamy tomato basil chicken over pasta, rice, or zoodles. Garnish with fresh basil leaves for an extra burst of flavor.

                Prep Time: 15 minutes | Total Time: 6-8 hours | Servings: 4
