1 lb Italian sausage (sweet or spicy, your choice)

2 medium zucchinis, sliced into half-moons

1 red bell pepper, diced

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil or parsley, for garnish

Grated Parmesan cheese (optional)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the rendered fat in the pan.

    Sauté the Vegetables: In the same skillet, add olive oil if necessary. Then, add the chopped onion and cook for 2-3 minutes until translucent. Add the garlic and cook for an additional minute until fragrant.

      Add Zucchini and Bell Pepper: Next, toss in the sliced zucchini and diced red bell pepper. Sprinkle with Italian seasoning, red pepper flakes (if using), salt, and pepper. Sauté the vegetables for 5-7 minutes until they are tender but still slightly crisp.

        Combine Everything: Return the cooked sausage to the skillet with the vegetables. Stir everything together and cook for another 2-3 minutes to heat through and meld the flavors.

          Serve: Remove from heat and garnish with freshly chopped basil or parsley. If desired, sprinkle with grated Parmesan cheese before serving.
