Skillet Cranberry Orange Chicken

4 boneless, skinless chicken breasts

1 cup fresh or frozen cranberries

1/2 cup orange juice

Zest of 1 orange

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon thyme (fresh or dried)

1/4 teaspoon cinnamon

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, salt, black pepper, thyme, and cinnamon on both sides.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Cranberry Orange Sauce: In the same skillet, add cranberries and sauté for 2-3 minutes until they begin to soften. Add the orange juice, orange zest, and honey to the skillet, stirring well. Allow the sauce to simmer for about 5-7 minutes until the cranberries burst and the sauce thickens slightly.

        Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning the cranberry-orange sauce over them. Cook for an additional 2-3 minutes to heat through.

          Serve: Plate the chicken and drizzle with extra sauce from the skillet. Garnish with sliced green onions and fresh parsley for a pop of color.
