1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

1/3 cup granulated sugar

½ teaspoon salt

½ cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar (for cheesecake filling)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup sour cream

½ cup whipped cream (optional, for topping)

Extra cinnamon sugar (for garnish)

Instructions
 

Prepare the crust:

    In a mixing bowl, combine graham cracker crumbs, cocoa powder, 1/3 cup sugar, and salt. Stir in melted butter until the mixture resembles wet sand. Press firmly into the bottom of a 9-inch springform pan to form an even layer. Bake at 350°F (175°C) for 10 minutes. Remove and cool.

      Make the cheesecake filling:

        In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar with an electric mixer until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and ground cinnamon until fully incorporated.

          Add sour cream:

            Gently fold in the sour cream until the mixture is well combined and creamy.

              Assemble the cheesecake:

                Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Lightly tap the pan on the counter to eliminate air bubbles.

                  Bake the cheesecake:

                    Place the springform pan in a preheated oven at 325°F (160°C) and bake for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about an hour.

                      Chill:

                        After cooling, cover and refrigerate the cheesecake for at least 4 hours or overnight for best results.

                          Serve:

                            Before serving, garnish the top with whipped cream and a light dusting of cinnamon sugar for that authentic churro flavor. Slice into pieces and enjoy this decadent dessert at your party!
