4 boneless, skinless chicken thighs

2 medium zucchinis, sliced into half-moons

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, cut into wedges

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 lemon, juiced and zested

2 teaspoons dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

¼ cup olive oil

Fresh parsley, chopped (for garnish)

Feta cheese, crumbled (optional, for serving)

Instructions
 

Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    In a large bowl, combine the olive oil, lemon juice, lemon zest, garlic, oregano, thyme, smoked paprika, salt, and black pepper. Mix well.

      Add the chicken thighs to the bowl and toss until they are well coated with the marinade. Let them marinate for at least 15 minutes while you prepare the vegetables.

        In another bowl, add the sliced zucchinis, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes. Pour the remaining marinade over the vegetables and toss to coat evenly.

          Arrange the marinated chicken thighs in the center of the prepared sheet pan. Surround them with the seasoned vegetables, spreading everything out in an even layer.

            Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the vegetables are tender and slightly caramelized.

              Once done, remove the sheet pan from the oven, and garnish with fresh parsley and crumbled feta cheese, if using.

                Serve warm, drizzling with any pan juices over the chicken and vegetables for added flavor.
