2 cups cooked chicken breast, shredded or diced

4 cups green cabbage, thinly sliced

1 cup carrots, grated

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed and halved

1/2 cup green onions, chopped

1/2 cup cilantro, chopped

1/4 cup sliced almonds, toasted

1/4 cup sesame seeds, toasted

For the Dressing:

1/4 cup soy sauce (low-sodium preferred)

2 tablespoons sesame oil

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), ginger, garlic powder, and a pinch of salt and pepper. Adjust seasoning to taste and set aside.

    Assemble the Salad: In a large mixing bowl, combine the shredded chicken, sliced cabbage, grated carrots, red bell pepper, snap peas, green onions, and cilantro.
